The legendary Palmer House was already on its third iteration—the original opened a scant 13 days before succumbing to the Great Chicago fire and its successor was razed to make way for a larger facility—before Conrad Hilton purchased it in 1945. Legend has it the brownie was invented here during the 1893 World's Columbian Exposition.
